One of the best thing about living in South Carolina for three years was getting introduced to grits -- specifically shrimp and grits.
I've tried a few different recipes over the years and last night's version was, by far, the best. Here's the recipe. Enjoy!

I've never been much of a grits fan, but I have to say that looks delicious!
Think of it as polenta. Virtually the same thing.
Everytime I play at the Cajun restaurant here in town, we get a free meal and i ALWAYS get the shrimp and grits!!

Actually, I doctored the recipe to reduce the fat and calories. It's not fattening at all.
