Vegetable Variety

Anyone who knows me knows I love vegetables. But I can get stuck in a rut. And when I do, it's Alice Waters to my rescue.



I got this book as a gift several years ago and never really started looking at it until recently. It's awesome. Someone said it "demystifies" vegetables, which is true. It also tells you how to select, clean and prepare everything from artichokes to zucchini.



Last night, I bought some beautiful beets and carrots, chopped them up, tossed in a tiny bit of oil, salt and pepper, then roasted them at 400 degrees for about 40 minutes. Delicious!

Looking at that picture makes me want to go out and buy the book! I often pick out new vegetables or fruits and then have no idea how to prepare them.

fresh veggies roasted with a bit of oil, salt and pepper is almost always delicious. Why don't I do it more often?
